The combination of high altitude, cool weather, precipitation and soils found in Adjuntas, produce an environment for the beans to ripen very slowly, allowing the flavor to concentrate and develop it’s favorable characteristics. These conditions also produce a denser, harder bean, enabling it to resist the high temperatures during the roasting process, thereby retaining its’ aromatic oils and flavor.
