My daughter has an auto-immune condition making her unable to eat potatoes.
The last few years I have not been able to have potato latkes for our Hannukah
Celebration. I made them this year from Goya Canned Yuca and everyone agreed they were wonderful! No one complained about not having potato latkes!

I love Goya Yuca...it's delicious and light...it's like a potato, only less dense...I put it in soups, pasta, on sandwiches, or sometimes eat it just by itself, seasoned with garlic and olive oil...
