Yellow Rice, Arroz Amarillo Recipe
- 2 tbsp annatto oil
- 1 tbsp corn oil
- 2 1/2 cups rice
- 4 1/2 cups water or chicken stock
- 2 tsp salt
Heat the oil in a saucepan or caldero. Add the rice and stir to combine. Add the water and salt and bring to a boil, cook until the water has just about cooked out. Stir again, cover and reduce heat to low and cook for 20 to 25 minutes. Stir again, and serve.
