Eggplant Stew, Berenjena Guisada Recipe
Ingredients:
- 3 tbsp olive oil
- 1/4 red onion in small squares
- 1/4 red pepper in small squares
- 2 cloves garlic, ground
- 1 tsp tomato paste
- 1 1/2 cup chicken broth
- 3 eggplants cut into squares
- 1/4 cup raisins
- Fresh herbs to taste
- Salt to taste
- Pepper to taste
Procedure:
In a frying pan with olive oil, sauté the onion, peppers, garlic, tomato paste and broth. Then add the eggplants and raisins and cook slowly for 20 min. Finish with fresh herbs, and season with salt and pepper to taste
