  • 3 ripe bananas
  • 1/2 cup ground beef
  • 1/4 cup tomato, chopped
  • 1 tbsp capers
  • 6 olives
  • 2 tbsp butter
  • 1 tsp salt
  • achiote
  • Salt to taste
  • 1 egg
  • 1 cup breadcrumbs


            Peel the ripe plantains and split them lengthwise into four slices. Fry in a little oil until golden. Fashion hollow circles with each slice of banana and use toothpicks to hold them. Sauté the meat in a little oil for five minutes. Add  the tomato, capers, olives, butter, salt and keep cooking for five minutes. Fill in the circles with the meat mixture. Top with breadcrumbs, egg and breadcrumbs again. Fry in a pan with oil, cook on both sides.
