Potato Cream Soup Recipe

  • 1 lb potatoes peeled and cut into pieces
  • Olive oil to taste
  • Salt to taste
  • Pepper to taste
  • 1/2 onion in small squares
  • 2 tbsp garlic ground
  • 1 bay leaf
  • 1/4 cup white wine
  • 2 1/2 chicken broth
  • 1/4 cup cream
  • 2 bacon strips
  • Fresh herbs to taste


                                          In a baking tray place the potatoes, season with olive oil, salt and pepper and bake at 350 degrees for approx. 35 min. Then in a saucepan sauté the onion, garlic, bay leaf and sauté for 2 minutes.  Add wine and reduce by half, add the broth and add the roasted potatoes, boil for 10 min. Place the preparation in the blender and process. Place the soup in a deep saucepan, add the cream and season to taste with salt and pepper. Cut the bacon in strips and toast in a frying pan without any fat, remove excess fat and use to decorate the soup.
