Coconut Cake Recipe
Ingredients:
- 2 3/4 cups flour
- 4 tsp baking powder
- 1/2 tsp salt
- 3/4 cup butter
- 1 1/2 cups sugar
- 1 cup coconut milk
- 1 tsp vanilla extract
- 4 egg whites
Procedure:
Sift together flour, baking powder and salt, set aside. Mix the butter and 1 cup of sugar in a blender on medium speed. Combine coconut milk and vanilla extract. Add dry ingredients to the butter and sugar mixture alternately with milk, beginning and ending with dry ingredients. In a small bowl, beat egg whites until foamy. Gradually add remaining 1/2 cup sugar and beat until stiff and glossy. Fold beaten whites into the batter carefully. Put the mixture into a greased mold. Bake for 30 min at 350 degrees.
