Peanut Butter Cheesecake Recipe
- 16 peanut butter sandwich cookies
- 16oz cream cheese, softened
- 1/2 cup sugar
- 1/2 tsp vanilla
- 2 eggs
- 1 pie crust
Preheat oven to 350F, crumble the cookies and reserve for use later, beat cream cheese, sugar and vanilla in a large bowl with an electric mixer on medium speed. Add eggs and whisk until blended well. Gently stir half of the cookies, pour into the pie base and sprinkle the remaining chopped cookies over the mix. Bake for 40 minutes. Refrigerate overnight.
