Pumpkin Budin, Puerto Rican Bread Pudding Recipe

  • 1 (16oz) can pumpkin
  • 3/4 cup sugar
  • 1/4 cup all-purpose flour
  • 2 tbsp butter, softened
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp ground cloves
  • 4 eggs
  • 1 1/4 cups milk
  • 1/2 cup whipping cream
  • 2 tsp rum


                          In a large mixing bowl thoroughly combine the pumpkin, sugar, flour, butter, cinnamon, salt and cloves. Lightly beat eggs into pumpkin mixture with a fork. Add milk, mix well. Pour in the pumpkin mixture in a baking pan and place in a bigger pan with about 1 1/2'' of water. Bake in 350 degree oven about 45 minutes or till knife inserted comes out clean. Cool pudding. Combine whipping cream and rum. Spoon pudding into 8 dessert dishes. Top each with whipped cream mixture.
