Rice and Green Pigeons, Arroz con Gandules Recipe
Ingredients:
- 3 tbsp oil
- 1 can tomato sauce
- 2 tbsp alcaparrado
- 1/2 cup sofrito
- 1 pkg sazon with achiote
- 2 cups short grain rice
- 1 can 15oz gandules
- Salt to taste
- Pepper to taste
- 5 cups hot water
Procedure:
In a medium size caldero add the oil, tomato sauce, alcaparrado, sofrito and sazon. Saute on medium heat for 4 minutes. Add the rice, gandules, salt, pepper and enough water to cover the rice 1" above the rice line. Bring to a boil and cook over high heat until the water has just about cooked out. Stir again and reduce heat to low and cook for 20 to 25 minutes. Stir again, and serve.
