
Yellow Rice and Shrimp Recipe
Ingredients:
- 2 tbsp annatto oil
- 1 tbsp corn oil
- 1 lb shirmp, peeled
- 3 cups short rice
- 1 cup frozen mixed vegetables, thawed
- 4 cups water or chicken stock
- Salt to taste
- Pepper to taste
- 1/2 tsp curry powder
Procedure:
Heat the annatto oil and corn oil in a saucepan or caldero. Saute the shrimp for about 2 minutes. Add the rice and vegetables and stir to combine. Add the water, salt, pepper, curry and bring to a boil, cook until the water has just about cooked out. Stir again, cover and reduce heat to low and cook for 20 to 25 minutes. Stir again, and serve.
