Chicken Mandarin Cilantro Recipe
Ingredients:
- 1 whole chicken
- Salt to taste
- Pepper to taste
- 1/4 cup vegetable oil
- 1/2 cup chopped white onion
- 1/2 cup chopped cilantro
- 2 cups freshly squeezed mandarin juice
- 2 cups chicken broth
- 1/2 cup white wine
Procedure:
Separate the chicken into parts and season with salt and pepper. In a pan heat oil and brown the chicken parts on all sides. Add the onion, cilantro, mandarin juice, broth and wine. Cook over medium heat for 10 minutes. After cooking for 10 minutes, transfer ingredients to an oven-safe dish and cook for approximately 20-25 minutes at 325º F.
