Ingredients:

  • 2 lbs whole chicken
  • Salt to taste
  • Pepper to taste
  • Minced garlic to taste
  • 2 lemons
  • Fresh thyme
  • 1 stick of melted butter
  • 3/4 cup olive oil
  • 2 red onions finely sliced
  • 2 tbsp ground garlic
  • 1/4 cup white wine vinegar
  • 2 lbs of cut and boiled cassava

     

    Procedure:

    Pre heat the oven to 425 degrees. Rinse chicken with cold water and dry well, season with salt, pepper, garlic, lemon all over, place the thyme and lemons in the serving. Bathe with melted butter and bake for 25 minutes then reduce heat to 325 and bake for 1 ½ hours, let stand and serve. In a frying pan heat the oil and add the onion and garlic, reduce the heat and leave for 20 minutes. Turn off and add the vinegar, season with salt and pepper and pour over cassava.
