Churrasco with Mango Chimichurri Recipe
Ingredients:
- 6 churrascos
- Salt to taste
- Pepper to taste
- 3 tbsp olive oil
- 1 cup finely chopped cilantro
- 1/2 cup chopped mango into thin squares
- 1/4 cup white wine vinegar
- 3/4 cup extra virgin olive oil
- 2 cups mushrooms cut into quarters
- 1 cup mini diced tomatoes
- 1/2 red onion in small squares
- 1 tbsp ground garlic
Procedure:
Season the churrascos with salt and pepper and cook in a frying pan with olive oil for approx. 2 to 3 minutes per side. In a container mix the cilantro, mango, vinegar and oil and season to taste. Sauté the mushrooms, tomatoes, onion and garlic, for 4 minutes then add the mango mix and top the churrascos with the chimichurri.
