Langostinos with Marinana Pasta Recipe

Ingredients:

  • 1/2 lb favorite pasta
  • 12 Langostinos (prawns)
  • Salt to taste
  • Pepper to taste
  • Paprika to taste 
  • 3 tbsp olive oil
  • 2 small red onions diced
  • 2 tbsp ground garlic
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • 1/2 cup white wine
  • 1 can tomatoes canned with their juice
  • Fresh basil to taste
  • Parmesan cheese to taste

Procedure:

Cook the pasta in boiling salted water. Peel the langostinos leaving head and tail, and season with salt and pepper. Season the same with salt, pepper and paprika,  In a slillet heat the olive oil and cook the langostinos for about 2 to 3 minutes per side and set aside. In the same skillet saute the onion, garlic, oregano, and basil, season with salt and pepper. Add the wine and reduce by half then add the tomatoes with their juice and cook the sauce over medium heat while grinding the tomatoes at the same time. After about 35 minutes finish the sauce with fresh basil, parmesan cheese to taste. Stir the pasta into the sauce and serve with the langostinos.
